for your canon 20D, you can just set it to Av mode to set the aperture to its widest value. alternatively, you can set it into fully manul mode to set the aperture and shutterspeed as well.
keep in mind for night shots, you may want to change the ISO rating to some higher value. since your camera is based on the same DIGIC processor engine as my canon G5, ISO 400 on your digital camera would probably be good for this picture given the lighting conditions. you also have the options of going all the way up to ISO 1600 (i think), but i imagine at that rating, the picture would turn out really grainy/noisy.
best way to learn about this stuff is just to play with the different settings. take one picture with differente apertures and shutterspeeds, and find out which one is best.
